3 cups olive oil
1 cup apple cider vinegar
2 apples cored & chopped (leave skin on)
1 cup sparkling cider (Non Alcoholic Martinelli’s) 
Pinch of salt
Pinch of pepper
½ cup brown sugar
¼ tsp cinnamon

Make your dressing: Combine all ingredients with a blender, Ninja or bullet and reserve.

2 tbs cinnamon, 2 tbs granulated sugar

TACO MEAT 

 

diced ginger

fresh garlic 

1 cup soy sauce (or Tamari) 

1 cup steak jus - water down beef stock for an easy replacement

1 cup cilantro chopped 

2 lbs of ground beef 

Make your taco meat: Heat a large skillet or pan, add a touch of olive oil and ½ of the ginger, ½ of the garlic and 2 lb of ground beef. Allow meat to brown, mixing often so as not to stick. As meat begins to cook, add steak jus and soy sauce and cook a few more minutes until boiling - you don’t want to reduce this - as it will become incredibly salty. Remove from heat and add the rest of the fresh garlic, ginger and cilantro.

1 large green papayas (peeled and julienned) - use pears, apples, or melons as an easy replacement

2 large carrot (julienned)

2 tbs shallots (paper thin cut)

1.5 tbs. fresh ginger (match stick cut) 

1 bunch of chopped cilantro

Make your slaw: Chop all ingredients and mix in large bowl.

Dash of fish sauce 

1/4 cup lime juice
